Several workflows were missing the emoji-prefixed step naming used
elsewhere (e.g. nightly-build.yml, build-submit-ios/android.yml), and
a couple of files that already used emoji had a few gaps. Fills those
in across all workflow files. Job-level `name:` fields are left
untouched since some are pinned as required branch-protection check
names.
* use xlarge runner for macos build
* try and fix yarn cache
* update actions/cache for pods step
* use expo github action main rather than v8
* update all actions to the same
* use yarn cache where missing
